Grenadine syrup

Ihave managed to grow four pomegranat­es this year on my tree so I found this old recipe for making grenadine – a wonderful-tasting syrup to mix with sparkling water. You can buy pomegranat­es at most fruit shops these days, so why not give this a go?

GRENADINE

1 Juice four pomegranat­es. To do this, cut in half, turn over onto a plate and whack the back of the fruit until the seeds pop out onto the plate. Do this with each pomegranat­e until you have all the seeds. 2 Put in a food processor and whizz briefly to release the juice – do not grind up completely or the seeds will give the juice a bitter taste. You want the juice to start gathering. Put through a sieve to strain off the juice.

3 To make grenadine, combine equal portions of pomegranat­e juice and sugar together. Let stand for 24 hours, then bring to the boil and simmer until it thickens and turns syrupy. Pour into sterilised bottles, seal and store in the fridge. 4 Mix the grenadine in a 1:5 ratio with cold water or sparkling water.
