Ham & mustard savoury bread pudding

SERVES 4- 6

Stale bread gets reinvented in this divine bake! With bread being one of the most wasted food items in Kiwi households, I’m happy to say, “Here’s the solution and it’s delicious!”

2-3 tbsp butter

6- 8 thick (2cm) slices stale

bread (see note)

200g shaved ham

6 eggs

½ cup cream

½ cup milk

1 cup grated cheese

1 tsp dried mustard

1 tbsp wholegrain mustard

1 tbsp rosemary, chopped

½ tsp sea salt and a grind

of black pepper

2 tbsp parsley,

finely chopped

½ tsp chilli flakes 1 Preheat oven to 180°C. Grease a large loaf tin.

2 Butter each piece of bread and arrange in the loaf tin, tucking the ham between slices.

3 In a bowl, whisk the eggs, cream, milk, ½ cup cheese, mustards and rosemary.

Add the salt and pepper. Pour the mixture over the bread, then press the bread into the mixture. Top with the remaining cheese, parsley and chilli flakes. Stand for 20 minutes to allow bread to soak up the egg mixture.

4 Bake for 20-30 minutes until top is golden and middle is cooked.

5 Serve hot in spoonfuls or if you’re patient enough, allow to cool and slice.
