One-pot chicken bake

SERVES 4- 6

450g butternut squash,

chopped

450g leeks, chopped

450g turnips, chopped

1kg chicken thighs and/or

drumsticks

400ml can full-fat coconut milk

2 tbsp coconut amino sauce (available from selected supermarke­ts)

2 tbsp dried sage

1 tsp fine sea salt

1 Place the oven rack in the middle position and preheat oven to 200°C.

2 Arrange the butternut squash, leeks and turnips in the bottom of a large baking dish. Place the chicken on top.

3 Mix the coconut milk, coconut amino sauce, sage and sea salt together in a bowl, then pour over the chicken and vegetables.

4 Bake for about 60 minutes until the vegetables are tender and the chicken is cooked through. Check the seasoning and adjust the salt to taste.
