Caramel apple & blackberry parfaits

Let’s be honest, making a whole apple and blackberry pie for only one or two can seem like a bit too much effort. But what about taking each component and combining them into a quick and easy parfait, using shortbread crumbs to emulate golden buttery pastry? You’re a genius, Mum!

¼ cup sugar

1 tbsp water

2-3 apples, peeled and chopped

– try Cox’s Orange or Braeburn

1 tbsp butter

1 cup blackberri­es, fresh, frozen

or tinned

1 cup custard, store- bought

or homemade (see note)

4 shortbread biscuits, crumbed 100ml cream, soft whipped

1 Start by gently heating the sugar and water in a mediumsize­d pan, without stirring, until the sugar dissolves. Cook until it bubbles and begins to turn golden. Add in the apples and butter, to caramelise, then cook until the apples are soft.

Set aside to cool.

2 Using two large parfait or drinking glasses, layer each with apples, blackberri­es, custard and biscuit crumbs. Repeat once or twice until the glass is full, then top with whipped cream and more crumbs.

3 Chill until ready to serve, then eat, alone or with company, it matters not!
