Barcelona-based chef and food stylist Yorinde Sleegers took time during a recent visit to New Zealand to prepare the Dutch-Indonesian banquet that features in this issue. The recipes are family favourites and classic dishes that she has put her own twist on, and reflect the huge influence Indonesian cuisine has had on her birthplace, Holland. This fusion cuisine is extraordinarily tasty! The Japanese-inspired salads that follow are no less delicious, with their carefully balanced textures and flavours. I love how many of this month’s recipes would slip easily into a “regular” dinner line-up – a great way to make weekday meals more exciting.
