WARM GRAPE, GOATS’ CHEESE& HAZELNUT SALAD WITH MANDARIN DRESSING

This warm salad is delightful for a light lunch. A fresh-style goats’ cheese or any type of feta works well in it.

3 tablespoon­s fruity olive oil

½ cup chopped hazelnuts

4 small bunches grapes

3 mandarins, peeled and segmented 2 tablespoon­s honey

1 tablespoon mustard seeds 3 tablespoon­s mandarin juice Mixed salad leaves

8 slices soft goats’ cheese, eg feta

Gently heat olive oil in a shallow frying pan. Add hazelnuts and grapes and toss to coat with the oil and warm through – the nuts should start to toast and the grapes blister.

Add mandarin segments, honey, mustard seeds and mandarin juice and simmer 2-3 minutes.

Arrange salad leaves on plates and top with sliced cheese. Spoon over the warm grapes, mandarins and hazelnut dressing. Serve immediatel­y. Serves 4
