This gluten- free ginger­bread recipe has quite a fol­low­ing. It is a favourite of Welling­ton caterer Ruth Pretty, chef Al Brown and thisNZlife ed­i­tor Emma Raw­son, who has been ob­sessed with it for years. It’s a “shared” recipe, pass­ing rel­a­tively un­changed from per­son to per­son be­cause it is so good. It orig­i­nated with Esther Wool­las­ton, a quil­ter friend of great cook Mary Biggs (read all about her on page 84) who gave Mary the recipe back in the early 1990s. Find it at thisNZlife.
