In a jar put ¼ cup ex­tra vir­gin olive oil, 2 ta­ble­spoons freshly squeezed lemon juice, the zest of 1 lemon, 1 tea­spoon runny honey, ½ tea­spoon dried thyme, 1 ta­ble­spoon toasted sesame seeds, 1 ta­ble­spoon sumac, 2 fat cloves of gar­lic crushed to a paste with ½ tea­spoon salt, and grinds of black pep­per. Shake in­gre­di­ents to­gether. Makes ½ cup
