An av­o­cado grower from the Bay of Plenty told me sev­eral years ago of a very sim­ple way to keep a cut av­o­cado fresh, noth­ing ex­tra re­quired. Just run a lit­tle cold wa­ter over the cut side of the av­o­cado be­fore putting it in the fridge. No cov­er­ing or other in­ter­ven­tion is re­quired.

The wa­ter seals the av­o­cado so a light skin forms over the cut edge, and the av­o­cado will keep in the fridge for sev­eral days - it’s that easy.

And it works!
