GLAZED PARSNIPS WITH SESAME SEEDS AND MAPLE SYRUP
The aroma of parsnips roasting is irresistible, and the addition of maple syrup simply enhances them. Don’t be surprised if some of these parsnips get eaten straight from the roasting pan.
700g parsnips, peeled
Salt and freshly ground pepper
25g butter
2 tbsp maple syrup
3 tbsp sesame seeds, lightly toasted
Preheat oven to 220°C. Cut the parsnips lengthways and then in half again. If you’re using older, tougher parsnips, cut into quarters and remove the woody cores. Add to a pan of boiling salted water and par boil for 2 minutes. Drain well. Gently heat the butter and maple syrup in a small pan or microwave. Transfer the parsnips to a roasting tin then brush with the maple mixture and season to taste. Cook, shaking the pan frequently, for 30 minutes or until golden brown. Sprinkle over the sesame seeds and return to the oven for 5 minutes, then serve.
