The aroma of parsnips roast­ing is ir­re­sistible, and the ad­di­tion of maple syrup sim­ply en­hances them. Don’t be sur­prised if some of th­ese parsnips get eaten straight from the roast­ing pan.

700g parsnips, peeled

Salt and freshly ground pep­per

25g but­ter

2 tbsp maple syrup

3 tbsp sesame seeds, lightly toasted

Pre­heat oven to 220°C. Cut the parsnips length­ways and then in half again. If you’re us­ing older, tougher parsnips, cut into quar­ters and re­move the woody cores. Add to a pan of boil­ing salted wa­ter and par boil for 2 min­utes. Drain well. Gen­tly heat the but­ter and maple syrup in a small pan or mi­crowave. Trans­fer the parsnips to a roast­ing tin then brush with the maple mix­ture and sea­son to taste. Cook, shak­ing the pan fre­quently, for 30 min­utes or un­til golden brown. Sprin­kle over the sesame seeds and re­turn to the oven for 5 min­utes, then serve.
