Emily’s herd is named for the Nor­folk Is­land term ‘hilli’ which means lazy or ‘laid-back’. These spoiled, late-ris­ers live up to their name too, ex­cept where milk pro­duc­tion is con­cerned. The goats are a cross be­tween the Saa­nen (which gives more milk than any other milk­ing goat breed) and the Toggen­burg (renowned for the but­ter­fat con­tent of their milk), mak­ing them ideal for a cheese-maker.
