Any rose (wild or cultivated) can be used in salads, but older, fragrant roses have the best flavour. Pull petals gently off the flower and snip off the cream base as this may have a bitter taste. Try rose vinegar which has a delightful­ly sweet, delicate flavour.

Bellis perennis

Ever thought of putting the wild daisy in your lawn in a salad? Probably not, but you can. The larger cultivated forms can be used also – just pull off the petals and sprinkle over salads.
