Ilook forward to this time of year, especially when there are a lot of green tomatoes on my vine that probably won’t ripen. It is the perfect excuse to make fried green tomatoes. We do love fried green tomatoes at our place, and could eat that Southern US crispy, tangy, spicy goodness every day.

Green tomatoes are actually used in lots of different dishes around the world. The Turkish, Burmese, USA, Italians, Indians and Kiwis have recipes (even for a cake) which all make the most of its green goodness.

You’d never want to use them as a replacemen­t for delicious ripe red tomatoes, but they do deserve a place in their own dishes that set off their unique tart flavour. If you don’t have your own green tomatoes you can sometimes find them at greengroce­rs or farmers’ markets. You just need to sort through the red ones and, for most of the following recipes, make sure you pick ones that are green and firm.
