Hind leg – cut­ting across the notch at the joint

It is re­ally im­por­tant to get it right for the hind legs be­cause you hang the car­cass by the Achilles ten­dons. If you cut across the next notch up the leg by mis­take, you can end up sev­er­ing the Achilles ten­don. It is not the end of the world if you get it wrong as you can wrap the leg with wire or rope and hang the an­i­mal by that in­stead.
