Hind leg – cutting across the notch at the joint
It is really important to get it right for the hind legs because you hang the carcass by the Achilles tendons. If you cut across the next notch up the leg by mistake, you can end up severing the Achilles tendon. It is not the end of the world if you get it wrong as you can wrap the leg with wire or rope and hang the animal by that instead.
