As much as possible try to avoid cutting. Sheep are easier to skin than alpacas because you can punch off the skin which makes for a cleaner pelt with less fat and flesh left behind. With alpacas it is not quite so easy. You do seem to have to use a knife quite a bit more with the result that you can cut the meat or through the pelt.
