As much as pos­si­ble try to avoid cut­ting. Sheep are eas­ier to skin than al­pacas be­cause you can punch off the skin which makes for a cleaner pelt with less fat and flesh left be­hind. With al­pacas it is not quite so easy. You do seem to have to use a knife quite a bit more with the re­sult that you can cut the meat or through the pelt.
