Orange Ku­mara Mousse

We love mak­ing this de­li­ciously smooth, deca­dent-look­ing dessert and tak­ing it to pot luck din­ners. Theo (13) then asks every­one to try and guess what it's made of. To date, no-one has guessed with­out the as­sis­tance of a few clues. Makes 4 cups.

In­gre­di­ents

4 orange Beau­re­gard kū­mara,

peeled, cooked and mashed 8 heaped tsp co­coa

or raw ca­cao pow­der 1 pinch of salt 2 tsp vanilla essence 2 large tbsp runny honey 1 or 2 cans, depend­ing on how creamy you like it, of thick co­conut cream

method

Whiz all in­gre­di­ents to­gether in a food pro­ces­sor or use a stick mixer. Re­frig­er­ate for 6 hours.

Theo nor­mally doesn't like ku­mara, but he was happy to lick this pot clean!
