GRILL cubes of tempeh and stir it into gado-gado sauce. To make gado-gado for two, mix 2cm of peeled fresh ginger, 2 small cloves of garlic, 1 small red chilli, 2 tsp of palm sugar and ¼ cup of dry, roasted peanuts in a pestle and mortar and crush together. Add a squeeze of lemon juice and enough cold water to bring it to a sauce consistency of your liking. Add salt to taste. •
FOR A hearty brunch, fry tempeh slices with fresh tomatoes, apricots and sugarsnap peas (even better when cooked on the barbecue). •
GO exotic and serve tempeh in a fragrant coconut curry sauce. If using store-purchased sauce or sauce mix, choose the green variety. • MAKE tempeh kebabs on a bed of stir-fried kale.
