How kiwifruit can tenderise meat
Raw green kiwifruit contains a natural enzyme called actinidin, which quickly breaks down protein, collagen, and connective tissues in meat. You can either:

peel a green kiwifruit, then rub the peel's underside over meat, or: •
peel, then mash a green kiwifruit, spread it over the meat, and leave it to sit for 15 minutes.
KRISTINA'S TIP: dairy-based smoothies containing kiwifruit often curdle, and fruit salad containing kiwifruit go mushy due to the effects of the same enzyme. To avoid it, add kiwifruit just before serving.
