Apple Caramel Pinwheels

Serves 4 Ingredient­s

1 cup flour

1 teaspoon baking powder

1⁄2 teaspoon salt

25g butter

1⁄2-3/4 cup milk

1 apple (wash, quarter, core & cut into small pieces)

Sauce 20g butter

2 Tbsp golden syrup

2 Tbsp sugar

2 Tbsp water

Method

1. Preheat the oven to 180 o C bake function.

2. Sift the flour, baking powder and salt together in a medium sized bowl.

3. Cut the butter into small pieces and rub it into the flour mixture until it resembles a coarse breadcrumb texture. Use your fingertips or a pastry cutter.

4. Add the milk and mix with a bread and butter knife to form a firm dough.

5. Roll out the dough onto a lightly floured board or clean bench into a rectangle shape, approximat­ely 20 cm x 15 cm in size.

6. Spread the apple over the dough and then roll the dough and apples up into a long sausage shape.

7. Cut the roll into 3 cm slices.

8. Place the cut slices on their side in a greased baking dish. A circular dish is the best choice as the apple dumplings can be attractive­ly arranged in a circle and join together in the baking process.

9. Bake for 25 minutes until just cooked and remove from the oven.

10. Mix together the sauce ingredient­s in a small saucepan or microwave bowl and melt together.

11. Pour the sauce over the apple dumplings and return to the oven to bake for another

8-10 minutes until they are golden brown.

12. Serve hot with a small serve of custard, milk, yoghurt or ice cream.
