We help readers track down a dish from a restaurant or cafe. Sandy Grigson asks how to make the raspberry muffins from Speargrass Inn cafe.
‘‘I’d love to have the summer raspberry muffin recipe from the Speargrass Inn cafe in Alexandra,’’ says Sandy. ‘‘They are the best muffins I’ve tasted in New Zealand.’’
The Alexandra eatery happily shared its recipe.
Raspberry muffins
Makes 8
300g flour 2 eggs 90g white sugar 240ml milk 18g baking powder 90g melted butter 200g raspberries fresh, frozen or tinned
150g dark chocolate chips
Topping
Equal amounts of flour, rolled oats, sugar, and softened butter.
In a large bowl, sift the dry ingredients. Make a well in the centre and mix in wet ingredients, then the berries and chocolate. Try to just combine the ingredients, don’t overmix.
For the topping, rub together all ingredients until combined well and is a crumble consistency. Portion muffin mixture into muffin papers.
Sprinkle with oat crumble topping.
Bake at 200 degrees Celsius for about 20 minutes, or until golden, and the skewer comes out clean.
