Be Natural Coco-Nutty Granola slice
Idon’t bake for weeks and then I go mad on it. I was searching bite.co. nz for a "healthy slice" (which is one of our most popular searches) and came across Jan Bilton’s simple-as carrot slice which am making later this week. Also under Jan were black sesame seed and citrus cookies — not so much healthy but very intriguing. I made them mini- sized to serve with a strawberry fool on Saturday night. But it was this one of my own creations that filled the tins last week. Using Be Natural Coco- Nutty Granola (which we enjoy for breakfast with coconut water) provided lots of crunchy goodness and flavour to what is otherwise a very simple slice.
Be Natural Coco-Nutty Granola slice
100g butter, at room temperature
½ cup coconut sugar
1 large egg
1 ½ tsp vanilla extract
1 cup flour
1 tsp baking powder
¼ tsp cinnamon
1 cup Be Natural CocoNutty Coconut, Spelt & Fig Granola
½ cup desiccated coconut
100g dark chocolate, chopped
1 Grease and line a 20 x 20cm square baking tin.
2 Beat butter and sugar until creamy. Beat in egg and vanilla.
3 Sift in flour, baking powder and cinnamon. Add Be Natural Coco-Nutty Granola, coconut and chocolate and mix just to combine all ingredients.
4 Press in to prepared tin and bake for 30 minutes or until a skewer inserted in to the centre comes out clean.
