On a recent visit to Mt Bruce, Kathy Clark and her family stopped at the Ka¯ka¯ Cafe for lunch. Clark had the tomato and chorizo soup and would love to recreate the dish at home.

‘‘We stopped at the Ka¯ka¯ Cafe on a cold day, and I enjoyed deliciousl­y warming tomato and chorizo soup. The recipe would be much appreciate­d and well used.’’

We contacted the cafe on her behalf and it happily shared the recipe.

Tomato and chorizo soup

❚ 1 brown onion, diced

❚ 2 garlic gloves

❚ Pinch of chilli flakes ❚ 2 teaspoons oregano ❚ 200g chorizo sausages, sliced ❚ 1 tablespoon of fish sauce ❚ 3 tins diced tomatoes ❚ 500ml vegetable stock ❚ 2 tablespoon­s pesto ❚ 2 tablespoon­s brown sugar ❚ Handful of baby spinach

Heat a large pot over a medium heat with a splash of oil. Fry off the onion and garlic, and once softened add the chilli, oregano, chorizo and fish sauce and cook for several minutes.

Next, pour in the tinned tomatoes and vegetable stock. Bring to the boil then simmer for 20 minutes.

Stir through the pesto, brown sugar, season with salt and pepper to taste and simmer for a further 15 minutes. Add the spinach just before serving. The Ka¯ka¯ Cafe at the Pukaha Mt Bruce Wildlife Centre, 85379 State Highway 2, Masterton. Open seven
