- A slice of Belgium The Mexican goes mobile

Authentici­ty is the key ingredient for Nicolas Delwaide, owner of the newly opened La Belle Waffle on Willis St.

Situated in a small, cosy nook in Dukes Arcade, the shop serves tantalisin­g waffles that hark back to Delwaide’s childhood.

He grew up in Brussels, so you can rely on him to know what makes a good waffle – it’s the little details, like using pearl sugar, for instance.

‘‘Pearl sugar is unique to Belgium. They make the waffles extra crunchy and coat them with layers of toffee when the sugar melts on the waffle iron,’’ Delwaide says.

‘‘As a result, our Belgian waffles are more dense. Crunchy on the outside, and soft and fluffy on the inside.’’

It’s not all about the sweet stuff, though. You’ll find savoury options at La Belle, too. These include the croque monsieur (free-range ham and cheese) and the caprese (a vegetarian option with tomato, pesto, and mozzarella).

‘‘La Belle Waffle was born as a way to share a part of my Belgian culture and connect with Wellington­ians. We hope to bring our customers the most authentic Belgian waffle experience, just like they would get in Brussels,’’ says Delwaide.

Many capital city workers will be familiar with Andres ‘‘The Mexican’’ Pimentel, who serves his scrumptiou­s, authentic Mexican fare from his hole-in-the-wall by the waterfront.

Now, more Wellington­ians will get to know him, as he’s just started his own food truck, Hot Like A Mexican.

Pimentel’s philosophy is about classic Mexican favourites, done right. He focuses on three main dishes – quesadilla­s, burritos and tacos, with a range of meat and vegan/vegetarian options.

‘‘I’m a real Mexican from Mexico. Specifical­ly, Orizaba, where Cerveza Sol comes from,’’ says Pimentel.
