The morish pumpkin balls at Seven Cafe in Christchur­ch have caught the attention of Maureen Arthurs, who would love to make the delicious balls at home.

Pumpkin balls

Makes 8

❚ 1 small crown pumpkin

❚ 1kg orange kumara

❚ 1 brown onion

❚ Large handful fresh coriander

❚ 1 tablespoon garam masala

❚ 1 tablespoon cumin

❚ 1 tablespoon ground coriander

❚ 50g spinach

❚ 500g breadcrumb­s

❚ 1⁄4 cup flour

❚ 2 eggs

❚ Salt and pepper to taste

❚ Oil for deep frying

Cut pumpkin and kumara into small chunks and roast in oven for 20 minutes or until cooked.

Finely cut the onion, roughly chop the coriander and cook in a pan with oil, add the spices and cook for five minutes until onion is soft.

In a large bowl mash the pumpkin, kumara and onion mix then stir through chopped spinach. Add salt and pepper to taste. Stir half of the breadcrumb­s into the mixture. Roll handfuls of the mixture into eight even balls. Coat the balls in flour, then egg, then remaining breadcrumb­s. Deep fry until golden brown.
