A ‘‘fantastic’’ vegetarian burger, made with a beetroot and carrot pattie, left a lasting impression on Wellingtonian Lyn Eden.
While recently travelling on the West Coast, Eden enjoyed lunch at Tommy Knockers Cafe in Granity.
‘‘As a vegetarian it can be tricky to find good options, but Tommy Knockers’ vegetarian burger was fantastic. The pattie was really tasty,’’ she said.
‘‘I would love to have it again, but Granity is a long way from Wellington.’’
We contacted the cafe, which was happy to share the recipe.
Vegetarian burger patty
Serves 2
❚ 1 onion, diced
❚ 2 garlic cloves
❚ 1 carrot, grated
❚ 1 beetroot, grated
❚ 2 teaspoons cumin
❚ 1 cup chickpea flour
❚ 2 tablespoons sweet chili sauce
❚ Salt and pepper to taste
Saute the diced onion, garlic and grated carrot and beetroot for five minutes.
In a bowl mix all of the ingredients together to a pourable consistency, you may need to add a little water if it is too thick. Dollop mixture on to grill and cook on a medium heat for approximately 10 minutes or until cooked through. Assemble burger patty on a brioche bun with aioli, hummus, sweet chilli sauce and salad.
