WATERMELON AND AVOCADO SALAD

6-8cm wedge of watermelon, cut into 2cm chunks, seeds removed

1 just-ripe avocado, cut into 2cm chunks 10-12 cherry tomatoes, halved

100g fresh mozzarella or bocconcini, torn into small chunks, or 60g creamy feta, crumbled Juice and zest of 1 lime, finely grated

½-1 small red chilli, very finely chopped (optional) Salt and ground black pepper, to taste

1 small handful of basil or mint leaves

Place watermelon, avocado, tomatoes and cheese in a bowl and toss gently. Pile on to a serving platter, sprinkle with lime zest and juice, chilli, if using, and salt and pepper. Top with basil or mint leaves and serve. If not serving at once, cover and chill for up to 4 hours.
