CHICKEN NOODLEN SOUP ENERGY LIFT

With an Instagram account full of Chrissy cooking up a storm at home, it’s no surprise that John Legend’s wife included this super-comforting recipe in her cookbook Cravings.

“Chicken soup soothes us when we’re not feeling well,” says dietitian Melanie. But the health benefits of chicken shouldn’t be dismissed.

“High in iron, it will not only lift your mood, but it will also keep your energy levels up.” And since it’s enriched with zinc, you’ll get over a cold quicker. Bonus!

To ensure your health is in good nick all year round, Melanie says to swap out the kosher salt for iodised salt.

She warns, if you’re low in iodine, you’re more prone to thyroid and metabolism problems.

THE RECIPE

2 tablespoon­s olive oil 1 medium onion, chopped 5 medium carrots, sliced 6 celery stalks, sliced 2 tablespoon­s minced garlic 1 teaspoon fresh thyme,

chopped 1 tablespoon kosher salt

or sea salt 1 teaspoon black pepper 1 bay leaf 10 cups low-salt chicken broth 2 cups cooked wide egg noodles 2½ cups shredded rotisserie

1. In a large saucepan, heat oil over medium-high.

2. Add onion and cook, stirring, for 6-8 minutes until softened.

3. Add carrots, celery, garlic, thyme, salt and pepper. Cook, stirring, until carrots soften – about 5 minutes.

4. Add bay leaf and chicken broth, then bring to the boil. Reduce heat and simmer for 45 minutes to meld the flavours.

5. Stir in noodles and chicken, then simmer for a further 5-10 minutes.

6. Season to taste. Discard bay leaf. Ladle into bowls and serve.
