What’s the weirdest food you’ve ever eaten?

I tried cooking a jellyfish during the early days at The Seafood Restaurant and I cooked it for hours, , but it just stung my mouth! More recently, in Iceland, I was lucky enough to be given a dish of stinky skate, which reeked of ammonia and now ranks as easily the most disgusting thing hing I’ve ever eaten. .

What would be your last meal on earth?

There would be lobsters under the grill, a Provencal fish soup and Bandol rosé, with Eton mess to finish.

What’s one ingredient that you couldn’t live without?

After writing this book, it’s now Mexican dried chillies like chipotle, pasilla or guajillo.

What’s your ideal romantic meal?

My wife Sas and I love a dozen Pacific oysters, plus a dozen langoustin­e from Scotland or New Zealand, all served on ice, followed by two fried Dover sole, with noisette butter, minted new potatoes and spinach, followed by passionfru­it pavlova.

What’s your first memory of cooking?

My mother was an excellent cellent cook. I was brought up onn a farm and my father’s fondest boast at Sunday lunch was that everything e came from it. She made excellent puddings, particular­ly treacle tart and blackcurra­nt fool.

Are there any foods you have a phobia about?

It’s not a phobia, but I don’t really like acidic fruit, like orange or strawberry, with my chocolate.
