Prepare Basic Donuts recipe to end of Step 3, reducing flour to 3 ¼ cups and adding ¼ cup cocoa. Roll dough out until 1cm thick. Using a floured 5cm round cookie cutter, cut 32 rounds from dough. Using a floured 2cm round cookie cutter, cut rounds from centre of larger rounds. Place on oven trays lined with baking paper. Cover with cling film and set aside for 30 minutes in a warm place. Continue Basic Donuts recipe from Step 5. Whisk 2½ cups sifted icing sugar, 1 teaspoon peppermint essence, 2 tablespoon­s milk and a few drops green food colouring in a bowl. Dip tops of cooled donuts in icing. Top with ¼ cup chocolate sprinkles. Allow to set.
