Lemon Donut Sandwiches

Prepare Basic Donuts recipe to end of Step 3. Roll dough out to 2cm thick. With a floured 8cm round cookie cutter, cut 12 rounds from dough. With a floured 3.5cm round cookie cutter, cut rounds from centre of larger rounds. Place on oven trays lined with baking paper. Cover with cling film and leave for 30 minutes in a warm place. Continue Basic Donuts recipe from Step 5. Halve cooled donuts horizontally. Spread bases with 1 ½ cups lemon curd. Top with 600ml thickened cream, whipped to stiff peaks, then donut tops. Serve dusted with icing sugar.
