XO Fudge

MAKES 36 PREPARATIO­N 15 MINUTES (PLUS CHILLING) COOKING 5 MINUTES

400g dark chocolate, finely

chopped 395g can sweetened condensed

milk 180g unsalted butter, finely

chopped 80g white chocolate, melted,

to decorate

1. Grease a shallow 20cm square cake pan. Line base and sides with baking paper.

2. Place chocolate, condensed milk and butter in a medium heavy-based saucepan on low heat. Cook, stirring occasional­ly, for 5 minutes or until melted, combined and smooth.

3. Pour chocolate mixture into prepared pan and smooth the surface. Chill for 6 hours or until firm. Remove from pan. Cut into 36 squares (3cm each).

4. Place white chocolate in a small snap-lock bag, snipping off a small corner. Pipe white chocolate Xs and Os onto fudge to decorate. Allow to set. Serve.
