250g boneless, skinless chicken thighs
1 cup spinach leaves
1 cup quick oats
¼ cup flour
+ Poach chicken in boiling water until cooked through. Cut into pieces then leave to cool.
+ Preheat oven to 180°C and line a tray with baking paper. Place chicken, spinach, oats and egg in a food processor or blender and pulse until mostly smooth.
+ Transfer to a bowl and add flour. Knead with hands until no longer sticky, then place on a floured bench. Roll dough into a rectangle around 1.5cm thick.
+ Cut into shapes with mini cookie cutters, place on tray and bake for 20 minutes.
+ Remove and leave to cool. Store in the fridge in an airtight container. Use within 1 week.
+ Why should the feline in your life go without a gift this Christmas? Make these for your kitty so he or she can enjoy a festive feast. You could also make this as a present for a friend with a cat.
+ Experiment with swapping the chicken for canned fish or leaving out the spinach, if you like.
+ If your cat has a special diet, check with your vet if they can eat these first.
