250g bone­less, skin­less chicken thighs

1 cup spinach leaves

1 cup quick oats

1 egg

¼ cup flour

+ Poach chicken in boil­ing wa­ter un­til cooked through. Cut into pieces then leave to cool.

+ Pre­heat oven to 180°C and line a tray with bak­ing pa­per. Place chicken, spinach, oats and egg in a food pro­ces­sor or blender and pulse un­til mostly smooth.

+ Trans­fer to a bowl and add flour. Knead with hands un­til no longer sticky, then place on a floured bench. Roll dough into a rec­tan­gle around 1.5cm thick.

+ Cut into shapes with mini cookie cut­ters, place on tray and bake for 20 min­utes.

+ Re­move and leave to cool. Store in the fridge in an air­tight con­tainer. Use within 1 week.

+ Ex­per­i­ment with swap­ping the chicken for canned fish or leav­ing out the spinach, if you like.
