APPETISING AND HEALTHY NIGERIAN SEAFOOD TOMATO PEPPER SOUP

The seafood tomoto pepper soup is a delicacy that is rich in nutrients. It serves as a good source of protein, vitamins, minerals and is omega-3 fatty acids.

In addition to that, seafood has various health benefits like promoting a healthy heart, maintainin­g keen eyesight and great skin. So as you embark on yet another crawfish boil or fish fry, know that the seafood you’re consuming will yield many benefits!

Seafood Tomato Pepper Soup Recipe

Tilapia fish or any fish of choice (cut to desired pieces)

3-6 pieces of fresh Prawns (dressed or whole) 2-3 pieces of Crab (dressed) 3-4 pieces of large Tomato 1 medium size Onion 3-4 pieces Scotch Bonnet Pepper (or as desired) Beef or Crayfish seasoning cube to taste Salt to taste

Preparatio­n

Chop the vegetables into large chunks, add a little water at the base of the pot and boil.

While the vegetable boils and softens, it starts to release its juice, leave the vegetables to release all the juices, turn off the heat, and allow to cool.

Extract the juice into a pot. The juice is preferable if it’s gotten a couple of days before. Blend your vegetable and keep for making stew. You may add more water for more quantity then boil the juice.

While boiling, add seasoning and African nutmeg, leave till the stock is well cooked then turn off the heat and allow to cool.

Add the seafood; steer slightly to allow the seafood (fish, prawn and crab) to marinade in the juice for about 15-20 minutes. Turn up the heat and cook under low heat till it is soft. At this point the soup has become tastier because the seafood has released its flavour. You can decide to correct with salt if you so desire. Yummy!!! Seafood Tomato Pepper Soup is ready. Serve either warm or hot with a chilled drink of your choice.
