CULINARY CORNER Creamy spinach, shrimp and tomato pasta

Have you ever thought of having creamy pasta? Well, today we’ll be offering you this tasty dish to cook at your convenienc­e. Trust me when I say this is a must try! This pasta dish is full of flavour and nutrients too with a blend of carbs, protein and vegetables. To top it all up, it is delicious in every sense of the word and simple to make. It will instantly become a family favourite in your home and will be gone in a matter of minutes. Here’s how to prepare it. Ingredient­s: • 1 pound of fresh raw shrimp • 5 fresh medium tomatoes, chopped • 1 bunch of spinach • 5 garlic cloves, minced • 4 tablespoon­s of butter • 1 tablespoon of olive oil • 1/4 small lemon • Salt • 1/2 teaspoon of pepper • 10 ounces of pasta • 1/2 cup of grated parmesan cheese, grated

Directions

In a large pot, heat a tablespoon of butter and olive oil until hot, then add the shrimp and half of the minced garlic. Cook until well done and pink. Sprinkle the pepper and salt.

Add the tomatoes and spinach and sauté with the remaining garlic. Keep aside.

In a separate pot, cook the pasta, drain and rinse with cold water so that it doesn’t stick and continue to cook.

Add the pasta to the shrimp and vegetables with the rest of the butter. Squeeze the lemon and season more with salt and pepper till desired taste.

Put it back on the heat until everything is nice and well heated. Remove from the heat and sprinkle the grated parmesan cheese to garnish and serve.
