Sweet breakfast potatoes

Enjoy this light, simple yet delicious recipe for breakfast. Ingredient­s Potatoes, onion, garlic, olive oil, paprika, garlic powder, onion powder, salt and pepper to taste, chopped fresh parsley or green onions for garnish (optional)

Preheat the oven: Preheat your oven to 425°F (220°C).

Place the diced potatoes in a large bowl. Drizzle with olive oil and toss to coat evenly.

Sprinkle the paprika, garlic powder, onion powder, salt, and pepper over the potatoes. Toss again to ensure the seasoning is evenly distribute­d.

Add the chopped onion and minced garlic to the bowl with the seasoned potatoes. Toss everything together until well combined.

Spread the seasoned potatoes, onions, and garlic in a single layer on a baking sheet lined with parchment paper or aluminium foil. Make sure the potatoes are evenly spaced out to allow for even cooking.

Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the potatoes are golden brown and crispy on the outside, and tender on the inside. You can flip the potatoes halfway through the cooking time to ensure even browning.

Once the potatoes are done, remove them from the oven and transfer to a serving dish. Garnish with chopped fresh parsley or green onions if desired.

These breakfast potatoes are perfect served alongside scrambled eggs, bacon, or your favourite breakfast meats. They also make a delicious addition to breakfast burritos or bowls. Enjoy!
