Exquisite special fried rice

RAMADAN SPECIAL //

Ramadan has come to an end and with it comes the celebratio­n of Eid el-Fitr. But of course, a proper celebratio­n is never complete without exceptiona­l food to go with it. Family and friends will come visiting and it is only right that you deliver with a meal fit for royalty. That is why we have chosen for this unique recipe of special fried rice rich with vegetables and protein fit for celebratio­ns like this.

INGREDIENT­S

• 6 cups of cooked basmati rice • ½ of oil • 1 medium onion, sliced • 2 teaspoons of minced garlic • ½- pound of liver cut into cubes • 2 chicken breasts cut into cubes • 1 pound large shrimp • 1 teaspoon of pepper sauce • ½ teaspoon of thyme • 1 teaspoon of white pepper • 1 teaspoon of curry powder • 4 seasoning cubes • 1 tablespoon of soy sauce • Salt to taste

• Mixed vegetables (cut into small pieces) peas, carrots, green beans and spring onions.

DIRECTIONS

Begin by breaking up the clumps of rice and then heat up the oil in a big pot until hot. Add the rice and stir for about five minutes then add the soy sauce and a small amount of water to moisten the rice, then transfer to a container and set aside.

In the same pot, heat a tablespoon of oil and add the shrimp with some salt to season it. Cook until done then remove and add to the rice.

Add another tablespoon of oil and now add the liver and the chicken breasts and stir until both the chicken and liver are well done and also add it to the rice and keep aside.

Again add oil and then put all the remaining ingredient­s into the pot and stir fry until it is fragrant which is more or less for two to three minutes. Do not overcook the vegetables. Then add the rice, shrimp and the meat and stir until everything is well combined. Add more salt or pepper to taste and serve.
