Prawn and chicken kebabs

This delicacy is a nice mix of seafood and meat, and of course it is full of flavour. It is relatively easy to make and will leave everyone wanting more.

INGREDIENT­S

• 1 tablespoon of olive oil • 2 tablespoon­s of fresh lime juice • 1 tablespoon of soy sauce • 2 tablespoon­s of fresh parsley • 1 clove of garlic, crushed • Black pepper to taste • Salt to taste • 1 pound prawns • 1 pound chicken breast, cubed • 1 large red onion • 8 ounces of mushrooms • 8 cherry tomatoes • 2 green bell peppers

DIRECTIONS

For the marinade, whisk together the olive oil, lime juice, soy sauce, parsley, garlic, salt and better and then divide the mixture into two. In one bowl, put the meat and prawns and in the other, add the vegetables place,well covered in the fridge for an hour.

Whisk together all marinade ingredient­s in a large bowl. Remove half of marinade to a smaller bowl so that meat and vegetables can be marinated separately. Place meat in a smaller bowl, letting it remain for 30 minutes at room temperatur­e. Marinate vegetables in larger bowl for 30 minutes at room temperatur­e. Chop the onions and bell peppers into medium sizes to fit onto the skewers and then start assembling the kebabs onto the skewers, alternatin­g the meat and vegetables.

Preheat the grill to medium heat. When hot, place the skewers on the grill, giving a bit of space between them. Allow them to cook for five minutes on each side while brushing the remaining marinade on the kebabs. Serve immediatel­y.
