Chicken Lemon Soup

Ingredient­s

2 tablespoon­s olive oil

1 grated carrot

4 finely chopped shallots

1 grated celery

80g cubed skinless chicken breast 2 lemons

800ml chicken stock

Salt and pepper to taste

Preparatio­n

Heat olive oil in a pan, add carrots, shallots, and celery. To this add chicken cubes. Cook for a while stirring occasional­ly. Add the juice of two lemons along with the stock. Sprinkle salt and pepper and let it simmer for about 45 minutes. Serve.

Carrot Soup

Ingredient­s

1 tablespoon olive oil 1 chopped onion

5-6 chopped carrots

10g of root ginger

1 cube of vegetable stock 3 cups water 1 tablespoon basil

Salt and pepper to taste

Preparatio­n

Heat a pan and pour oil. Then add onion, carrot, and ginger. Cook till onion becomes soft. Make vegetable stock with the cube and water and add to the pan. Bring it to a boil and simmer for half an hour till the carrots turn soft. Add salt and pepper. Blend this in a mixer and add little water if required. Garnish with basil and enjoy with a toast.

Potato and Leek Soup

Ingredient­s

1 tablespoon olive oil

1 chopped leek

5 diced potatoes

500ml vegetable stock 2 tablespoon­s chopped parsley

Preparatio­n

Heat olive oil in a saucepan and put some leek. When it becomes slightly brown, add the potatoes and let it cook on low heat for half an hour. Stir occasional­ly. Now add the vegetable stock and chopped parsley and mix well. Simmer till it thickens. Cool the soup and blend it until smooth. Pour in bowls and enjoy this low calorie healthy soup.
