Taro Akimoto has finally gotten over his taste for no-frills digs, opening a new ramen joint in the snazzy 480 Queen complex. But this semi-temporary Edward Street shop is just as fun (at least until the end of the year, when it’s set to close) with its ramshackle nature and peoplewatching opportunities. Either way, Akimoto’s bowls of noodles are some of the best in Australia. His secret? A stock built from prized Bangalow pork.
