‘Slow food’ ang ihain sa Media Noche

Hinihimok ni Senador Loren Legarda ang mga Pilipino na maghanda ng “slow food”— sa halip na fast at processed food – sa Media Noche upang suportahan ang local cuisines at traditional cooking, gayundin ang mga lokal na negosyo na bumubuo at nababahagi ng mga prinsipyo sa likod ng slow food movement sa Pilipinas.

Sinabi ni Legarda na ang slow food ay isang pandaigdigang adbokasiya na nagsusulong sa konsepto ng mabuti, malinis at fair food sa pamamagitan ng pagpreserba sa tradisyunal at rehiyonal na lutuin na unti-unti nang naglalaho at nagtataguyod ng pagpapalago sa mga halaman, buto, at livestock ng local ecosystems.

“At the heart of the slow food move- ment in the Philippines is the preferential choice for food that is innately ‘good’— from the planting of seeds up to harvesting, to the preparation of food, including its packaging, marketing, and delivery, the whole process, which harnesses local skills and talents, is ethical, righteous, and respectful to the environment and the labor put into it,” ani Legarda.

Nagsimula ang slow food advocacy bilang grassroots movement sa Italy noong 1986 at kumalat na sa buong mundo. Noong 2012, nabuo ang Slow Food Manila sa Pilipinas. Masugid na tagsuporta si Legarda ng mga pagsikap ng samahan na maipakita ang slow produce sa World Food Expo at sa Madrid Fusion Manila, at sa pakikipagtulungan din ng Department of Agriculture (DA).

Si Legarda ay miyembro ng isa sa limang slow food convivia o local chapters sa Pilipinas, na idinaos sa Manila, Negros, Baguio, Pangasinan, at Cavite.

Layunin din ng slow food advocacy na protektahan ang Philippine biodiversity sa paghihikayat ng pagpapalitan ng mga buto mula sa iba’t ibang rehiyon sa bansa, at pagpipreserba sa tradisyunal at katutubong kaalaman ng mga Pilipino.
