I have been to Spain more than a few times but it was only in Valencia that I heard of horchata. Horchata is actually quite an ancient drink and can be traced all the way back to the Muslim presence in Valencia during the 8th to 13th centuries. Horchata is made from tigernuts (also called chufa, and it is a tuber, not a nut), water, and sugar. The drink is white in color, cloudy, medium-bodied, sweet, rich in flavors and almondlike in taste. It looks like our guyabano (soursop) juice. This is a very popular drink in Valencia, horchata
