RED GINGER restaurant, City of Dreams Manila’s Southeast Asian dining destinatio­n, is offering authentic Singaporea­n hawker cuisine for lunch and dinner until the end of June. The curated Singaporea­n hawker à la carte menu reflects the various cultural influences and rich diversity of the Lion City and includes Claypot Fish Head Curry, a lapu-lapu fish head in tamarind curry gravy, eggplant and okra, served with Jasmine rice; and Singapore Chili Crab, mud crab cooked in sweet chili garlic sauce, capsicum, baby bok choy and served with fried mantou (Chinese steamed buns). Other dishes on the menu are Babi Chin, or braised pork belly in sugar cane, dried mushroom, Gai lan (Chinese broccoli) and Jasmine rice; Hokkien Noodle dish which combines stir-fried vermicelli and thick yellow noodles with savory seafood such as prawns, squid, and fish cake as well as bean sprouts, garlic, chives and sambal; and Kepak Ayam Goreng, chicken wings with an Asian twist thanks to shrimp paste, baby cucumber salad, and five spice dipping sauce. Savoury dim sum

MARCO POLO Ortigas Manila’s Lung Hin Cantonese restaurant is showcasing a variety of authentic steamed, pan-fried, and deep-fried dim sum dishes. Dim sum master chef Wong Chiu Lung offers steamed dumplings with fillings such as scallop, spinach and shrimp dumpling,

and shrimp with gold leaf, also known as and Filipino-favorites chicken feet with XO Sauce, barbecue pork bun (or and cordyceps flower are also in the menu. Pork with a twist can also be enjoyed, with its truffle sauce.
