F&B Services NC II
The course is divided into three parts: Introduction to F&B service, providing table service, and providing room service.
Topics are the duties and responsibilities of an F&B service staff, the F&B department, role in the tourism industry, and handling complaints from the guests, greeting guests, taking food and beverage orders, serving orders, ensuring guest satisfaction, concluding food and beverage service, and preparing for the next service. The third part will cover knowledge and skills to properly provide room service.
Bread and Pastry Production
This course, for two years now, is popular. It covers knowledge and skills required to prepare and produce a range of high-quality bakery products in commercial food production environments and hospitality establishments. It also includes producing, filling, decorating and presenting a range of sponges and cakes, where finish, decoration and presentation of a high order are required.
Cookery NC II
Students will learn skills in cleaning kitchen areas, cooking and preparing hot, cold meals and desserts for guests in various food and beverage service facilities. Part of cleaning is sanitizing kitchens, equipment and utensils for food preparation and storage in commercial/institutional kitchens. Cooking will include various recipes for sauces and soups, hot and cold appetizers, salads and dressings, and presenting sandwiches. It also includes presenting and storing various vegetables dishes, egg dishes, starch dishes such as pasta and noodles.
Electrical Installation and Maintenance
This course is designed for installing and maintaining electrical wiring, lighting and related equipment and systems in residential houses or buildings where the voltage does not exceed 600 volts. It covers installing electrical metallic and non-metallic conduit, wire ways and cable clamp, auxiliary terminal cabinet and distribution frame panel board or safety switch and used in roughing-in based on the required performance standards.
Housekeeping
This course aims to enhance the knowledge and skills for housekeeping services, preparing guest’s rooms, providing valet or butler service, laundering linen and guest’s clothes, cleaning premises and equipment in accordance with industry standards. It also includes skills for working in the laundry section in a commercial establishment.
