The season-inspired five-course menu features torched rare and wild

New Caledonian blue prawn, broccoli emulsion, mushroom and pine nut broth; pan-seared French foie gras, chestnut and lemon verbena-scented Jerusalem artichoke purée; grilled sea bass, chorizo Iberico enhanced razor clams, crunchy cauliflowe­r risotto; Australian Wagyu beef tenderloin celeriac confit, sweet onion foam, Périgord black truffle; and Chef Roget’s coffee and chocolate “conception.”
