From Portland, Oregon, Slappy Cakes landed in a positively huge splat in the Philippine­s, bringing with it an exciting do-it-yourself pancake experience. The tables at Slappy Cakes have built-in griddles which the staff has carefully set to a predetermi­ned temperatur­e that's ideal for cooking pancakes. The temperatur­e is relatively low, but kids can still burn their fingers so parents must keep a close eye on their kids. But in no way does this hamper the fun in Slappy Cakes, where kids are sure to have fun in thinking up creative concoction­s for their own pancake creations.

First, pick your pancake batter. They convenient­ly come in a squeeze bottle and are available in buttermilk, whole grain (P225), peanut butter, vegan, and chocolate (P260). Then, choose the fix-ins to add to your pancake. Fix-ins range from sweet, such as chocolate chip (P45), to savory, such as white cheese (P80) and salted egg (P45), to something local, like coconut (P40). Don't forget to choose some toppings like lemon curd (P80) which is made fresh daily or some blueberry jam (P80).

Now that you've assembled your ingredient­s, you can finally start cooking! Squeeze your batter onto the griddle, wait for it to bubble, then add the fix-ins. After dropping in your fix-ins, cover them up with a bit more batter to prevent them from sticking to the griddle. For fluffier pancakes, Slappy Cakes recommends not to paddle them! Syrup is readily available on the table, and you can choose from regular syrup or mango syrup.

Aside from pancakes, Slappy Cakes also serves Filipino breakfast favorites under the Slappy Happy-noy line. The Garlic Bangus (P250), which is popular with Filipinos and foreigners alike, features fried bangus, garlic rice, mango salsa, and an egg. One of the newest additions to the menu is the Chicken Tocino Eggs Benedict (P350), Slappy Cakes' local take on the classic recipe, taking out the ham or Canadian bacon and using chicken tocino, another local favorite.
