A glass of Merlot is flawless with the escargots, which are plump, while the jus, garlic butter, and herbs they are cooked in is perfect for bread-dipping. The Niçoise cups (seared tuna slices on greens with anchovy vinaigrette) go well with Chardonnay. The chorizo fideua (chorizo, chipolata, and pork belly) on fine noodles topped with aioli sauce is very rich and filling. The lechon wrap is livened up with a sriracha and aioli dressing and satiates those acute local comfort food cravings. Churros with chocolate in authentic Spanish fashion rounds out the meal nicely.
