TATLER TIPS

The Pek­ing duck is a gor­geous golden brown and dusted with a slightly sweet toasted co­conut. Its meat is suc­cu­lent and driz­zled with a rich, beau­ti­ful sauce that is packed with spices. The dish is served with nasi ulam, a fra­grant, slightly sweet, Malaysian herb rice salad. The "fish" is their take on the pop­u­lar nasi lemak, a Malay fra­grant rice dish cooked in co­conut milk and pan­dan leaf. This comes with a beau­ti­ful piece of sea bass otah, which is black­ened on the out­side, giv­ing it a charred taste to bal­ance the fish paste sauce that is blended with spices and herbs.
