The chef JP Anglo combines two Filipino favourites to create the inasal sisig, a smoky and crunchy dish that delights. The sizzling kansi with batwan gravy has an unexpected sour kick. Meanwhile, the twice-cooked pork belly with ginamos gata is tender and perfectly seasoned. End the meal with the banana tsokolate turon, which has creamy chocolate-peanut-candy-turned-syrup drizzled over the crispy rolls. Best enjoyed while hot.
