The verdict is in on the roasted U.S. farm Peking duck, a measure of the chef's cooking prowess—excellent! The meat was tender, seasoned delicately to bring out the meat's natural flavour; and the skin was golden with a light crunch. Tellingly, the pancake was firm to hold its delectable contents, but thin enough not to overwhelm. Make room for dessert, the sensational coconut pralines with white chocolate, crispy pancakes filled with lotus paste and green tea, and the oven-baked crispy lotus wafers, nearly stole the show.
