As mundane as it may sound, highly recommende­d are Sugi’s perfect tempuras— particular­ly the and the shiitake. They are perfectly coated and fried at the exact temperatur­e to produce the wonderful contrast between a crisp coat and the moist interiors. The agedashi tofu is another perfect little start to a meal. It is served at just the right temperatur­e and the sauce is the perfect amount. A simple salted chicken yakitori stick is the go-to counterfoi­l for all the fried dishes. It is lightly flavoured and clean.
